Dinner Basics: Guacamole!

Guacamole is as much a staple in our house as chicken curry and rice. It’s perfect for a hectic midweek dinner because it comes together in a matter of minutes and it is so versatile! It adapts well as a dip (party staple, too!), as a sandwich spread, as a dipping sauce with grilled chicken tacos and is excellent on its own, spread on a cracker. This is THE item you need on the dinner rotation. The only thing you need to be vigilant about is buying a ripe avocado. Here, we don’t get too many different kinds so I make sure I either ask the vendor for a ripe avocado and use it that day or buy one that will become ripe in another day or so. I know there are many versions of Guacamole but mine is fiery and suited for my palate. You can adapt as you wish but I so dearly love the addition of garlic, bird’s eye chilli and some cumin powder. Recently, I acquired some Spanish paprika and have been adding that too, since. Don’t you just love recipes that breathe a life of their own and grow as you make them more often? Me too.

Serves: 4 as a spread, double or triple quantities to make as a dip

1 large ripe avocado, peeled and pitted

1 small onion, peeled and finely chopped

1 small tomato, deseeded and chopped

1 – 2 small bird’s eye chili (depending on how hot you want it), finely minced

2 – 4 cloves of garlic, minced (again, depending on how garlicky you want it)

1/4 – 1/2 tsp cumin powder

Juice of 1 small lime

2 tbs coriander, roughly chopped (don’t be too exact – just tear a handful)

A dash of paprika (optional)

Salt and pepper, to taste

1. In a small bowl, add avocado and mash it with a fork till it is paste-like. Add onion, tomato, garlic, chilli, lime juice, cumin powder, coriander, paprika and salt and pepper. Mix well to combine. Taste test and adjust seasoning if necessary. Refrigerate till needed — but I wouldn’t recommend making this too ahead of time. Perhaps, just till you toast some bread and get your meat ready. Avocados brown quickly. Serve with nachos, crackers or crusty bread!
