Another month, another Surprise Recipe Swap! This month, my partner was the incredible Who Needs A Cape. It’s an amazing blog run by many multi-talented women who talk non-stop about food, organisation, crafts, health, fashion – you name it.
This month, after my baking marathon for the bake sale, I wanted to take a little break from dessert and do something that was easy and perfect for a quick weeknight dinner. Of course, Who Needs A Cape had a solution. Island Chicken is an easy-peasy chicken dinner that literally comes together in a matter of minutes – all you need is to mix up the marinade and pour it on top of the chicken. The marinade does need a minimum of 6 hours for the flavor to permeate but you can always do it the night before. Simple marinade, simple chicken recipe – perfect for a hot summery day. I skipped the addition of chicken stock because I dislike the synthetic flavor and I swapped the lemon zest for some fresh zingy lime zest that we got from a friend’s farm! We had these with some sauteed peppers and corn on the cob. So good!

6 pieces chicken breasts, deboned and pounded flat
3 tbs lemon juice
1 lime zest
2 – 4 cloves of garlic, minced
2 tbs oregano
2 1/2 tbs soya sauce
1/4 cup vegetable oil
Salt and pepper, to taste
1. In a small bowl, add all the ingredients for the marinade. Mix together and taste for seasoning. Adjust if necessary and pour over chicken. Leave to marinate for minimum 6 hours.
2. To prepare, pre-heat the grill and remove the chicken from the refrigerator up to 30 – 40 minutes before. Brush with oil and add the chicken pieces. Cook for 2 minutes per side and serve hot!
