You know how you’ve had those days where nothing has gone right? And you know how you always have that feeling that nothing is going to go right and the day has only just begun? Yea, I had one of those days yesterday. Ultimately, I decided, the cure was chocolate and F.R.I.E.N.D.S. I zeroed down on brownies and looked for a quick and painless recipe. Boy, did it live up to its name. It couldn’t have been simpler than using a boxed mix! Save these super dangerous brownies (because of how quickly they’re done!) for a time when you need them – like Monday or like if your favorite movie is playing on TV. Instant Gratification Brownies
Yields: 9 pieces

1/2 cup (113 g) butter
6 oz finest chocolate cut into chunks/chips
1 tsp finest coffee
3/4 cup (150 g) caster sugar
1 tsp vanilla extract
2/3 cup (80 g) flour, sifted
1/2 tsp baking powder
1. Pre-heat the oven to 175 deg C. Line a square tin with parchment paper, letting the sides overhang.
2. Melt the chocolate and butter in a heatproof bowl in the oven in 10 second bursts. Stir till completely smooth. Add in the sugar and whisk again. Add the eggs altogether and whisk till combined, finishing with the vanilla extract.
3. In a separate bowl, add the flour and baking powder. Whisk to combine and add to the batter. Fold gently with a spatula till there are no streaks of flour left. Bake for 20 – 25 minutes till a skewer inserted comes with crumbs attached.
