Sandwich Musings & Truffle Grilled Cheese

    I don’t know about you guys but I spend many minutes of the day contemplating what my favorite sandwich should be like. This sandwich, lazily borrowed from Nigella Lawson’s Nigella Express is a blueprint for what a good sandwich should definitely contain (in my book anyway) – grilled cheese, peppers, garlic, Worcestershire sauce and black truffle oil. That being said, a good bread is absolutely essential and by no means is not included in the list – it’s just a given. While I am listing out, a strong complement to the sandwich wouldn’t hurt – a nicely tossed salad with enough flavor to round off but not overpower the meal, a cold drink and a dessert to look forward to and that’s my ideal dinner.
    Now, I can wax poetic about this particular sandwich but I know the sandwich ideals differ. So you can give this a try or mix it up with something outrageous and send me a link/picture/sandwich itself. Use this as a blueprint and don’t be afraid to put your own unique stamp to it.
    Truffle Grilled Cheese
    Serves: 4
    Adapted from: Nigella Express 
    For spread:
    2 tsp mayonnaise
    2 tsp Worcestershire sauce
    4 – 5 small cloves of garlic, minced
    1/2 tsp black truffle oil (or more if you like)
    Salt and pepper to taste
    For assembly:
    8 slices of good multigrain bread (or any of your choice)
    1/2 bell pepper, sliced thinly
    1/2 onion, sliced thinly
    1/2 tomato, sliced thinly
    4 slices of cheese (of your choice – I used Kraft Cheese Slices)
    Salt and pepper to taste
  1. Heat the grill, if using.
  2. In a small bowl, add all ingredients for spread and mix well with a spoon. Spread this over 4 slices of bread.
  3. On the remaining 4 slices, add cheese slice (this is important – the cheese slice acts as a buffer to stop tomatoes from moistening the bread and tearing), tomato slices, onions and peppers. Sprinkle a little salt and pepper and transfer onto hot grill. Grill till cheese melts, took about 6 – 8 minutes for me. Serve immediately.
