I love Nigella Lawson. Who doesn’t? Now I love her even more because she has managed to spruce up our weeknight dinners by providing some easy but surely-a-hit-with-everyone recipes. Last night, when I felt uninspired to cook the regular fare, I turned to Nigella. In her book Nigella Express, she has the best recipe for a quick weeknight fix – Caesar Salad Cornets! Its essentially a caesar salad wrapped in a tortilla but its comforting, light and definitely easy to make. While she holds off on the garlic, I increased it slightly. If you don’t have any tortilla wraps lying around, just use regular bread. It works just as well. The best part about this wrap is if I don’t feel like eating it in a wrap/sandwich, it makes for an excellent salad by itself! If making the salad version, might I suggest adding more lettuce?
- Add the cleaned and cubed chicken in a pan, season with salt and pepper and cook on low heat till tender and fully cooked.
- On a well oiled, heated pan, place a wrap and cook for about 1 to 1 1/2 minutes till done. Repeat for the next 5.
- Now, combine chicken, lettuce, mayonnaise, parmesan and Worcestershire sauce in a large salad bowl. Grate garlic over it, season with salt and pepper and toss thoroughly till combined.
- To assemble wraps, place the chicken lettuce filling in the centre. It must resemble a line. Now, hold up the bottom of the wrap and press over chicken filling. Next, take the left side of the wrap and press tightly over chicken filling. With a quick rolling motion, flip the wrap over and press firmly. Repeat for other 5. (Do note, there is essentially no cooking involved after assembling the wraps so serve immediately. If not then heat the chicken in the microwave oven for about 30 to 40 seconds before adding lettuce etc.)
Nigella’s Caesar Salad Cornets

Feeds 5 greedy people
500 gms chicken, cubed
200 gms lettuce, washed thoroughly
4 tbs of mayonnaise
3 cloves of garlic
1/2 tsp of Worcestershire sauce
1/4 cup grated parmesan cheese
6 frozen tortilla wraps, thawed
Salt and pepper to taste
